Recipe for Melopita from Sifnos

One of the most famous recipes of the island is as we said the melopita that in Sifnos you will enjoy in its best version. Until you go, however, you can try the original recipe from Argyro Barbarigu and feel like you’ve been there.

Materials

  • 700 grams fresh anthotyro (white cheese)
  • 3/4 cup Sugar
  • 5 large eggs (beaten)
  • 1 fl. thyme honey
  • 1 teaspoon cinnamon

For the baking pan

  • 1 tablespoon butter for baking
  • 1/4 cup semolina for baking pan
  • 2-3 tablespoons extra honey for finishing
  • a little cinnamon for serving

Implementation

For the traditional melopita of Sifnos without leaf, you will need a long baking pan of 22×32 cm or a round baking pan with a diameter of 28 cm. First you have to butter the baking pan and its sides. Sprinkle the semolina all over the baking pan while preheating the oven to 170 °C in the air.

In a large bowl, add the anthotyro and melt it to make cream. Make a puddle in the middle and drop the beaten eggs, thyme honey, sugar and cinnamon. Mix all the ingredients until the mixture becomes smooth and homogeneous. Empty the melopita into the prepared baking pan and shake the baking pan to straighten the surface. Bake on the medium grill in a preheated oven for about 45′ until the honey pie rises, peels off the sides of the baking pan and the surface is golden brown.

As soon as the melopita comes out of the oven as it is hot, add some honey and sprinkle with cinnamon. Let the pie suck the honey cool and stabilize. Carved it into baklava pieces and served.
