Recipe for Naxos dessert “melachrino”
One of the most famous recipes you have to taste is “melachrino”, in case you choose Naxos for your escape. A dessert with a taste of the special and intense citrus of the island. Ingredients
15 eggs
15 tablespoons of sugar
15 tablespoons of breadcrumbs, grated
2 glasses walnut, roughly chopped
1/2 cup citrus drink
1/2 small spoons of soda
lemon zest
1/2 small spoons cinnamon
1/2 small spoon cloves
1 tablespoon. cocoa
For the syrup:
6 fl. sugar
4 1/2 fl. of water
3 tablespoons of thyme honey
Implementation
First, mix the egg yolks with the sugar until they reach the point of whitening while in another bowl make the egg whites meringue. Then mix all the ingredients except the citron. Add them to the yolk mixture and then add the meringue slowly-slowly.
It is almost done. At this point pour the cake into a buttered baking pan. Bake it for about 40 minutes at 180 degrees. Once it is cooked, allow it to cool and then wet it with the citron. It is very important not to open the oven at all so that the dessert is cooked properly
Prepare the syrup by heating the sugar, the water, and the honey. Boil the syrup and put it over the cake. And it is Ready!
